The most unusual characteristic of Canelli is also the least visible: the so-called Underground Cathedrals, “Cattedrali Sotterranee”.

The name refers to kilometers of tunnels dug directly into the tuff of the hills between the sixteenth and nineteenth centuries.
These were the only places "whose silence is reminiscent of that one finds in ancient cathedrals" where, protected by the ancient soil, premium wines and spumante could be kept at an ideal constant temperature and humidity, and they are aged here still, as they bide their time before conquering the world's most sophisticated palates.
